Slow Cooker French Dip

This is one of my all-time favorite recipes.  It’s simple, flavorful, and it’s always a crowd pleaser at our house.  I hope you enjoy it!

French Dip

Ingredients

3 lb. beef chuck roast (or sirloin tip)

2 c. water

1/2 c. coconut aminos

1 tsp. rosemary

3-4 whole peppercorns

1 tsp. red pepper (optional)

Directions

Place roast in slow cooker.  Add water, coconut aminos, rosemary, peppercorns and red pepper if using.  Cover and cook on high 5-6 hours or until meat is tender enough to shred with forks.  Strain the broth and skim the fat, then use to either pour over the meat or put into bowls for dipping.

Serve the meat on rolls for french dip sandwiches, or serve over zucchini noodles, steamed or roasted broccoli, or sauteed spinach.

Progress Report #4: 50 Goals Project

A goal properly set is halfway reached. (1)

My 50 Goals Project is alive and well, and I continue to make progress!  So many of the things on this list are things that I have thought about for a long time, but simply never gotten around to doing.  Putting my goals in writing has helped me to accomplish so much!  Instead of just thinking “I should do that sometime”, I make an effort to do it so that I can cross it off the list.  The quote above really sums it up for me, as I’m finding that what I’m becoming as I achieve these goals is the true gift in this project.

I’ve never really understood it when people say “You can’t have your cake and eat it too.” What’s the point in having cake if you’re not going to eat it? I feel that way about most desserts, which is why I try to keep the typical sugar laden types out of the house as much as possible.
