Healthy Snack Idea: Spiced Carrot Jerky

This delicious snack is easy to make and packed with nutritional value.  You probably know that carrots are high in vitamin A, but that’s not all they’ve got going for them!  They’re also a good source of vitamins K, C, B6 and folate, and the minerals manganese, potassium, copper, and iron.  And they’re a good source of fiber, too!

This recipe would be wonderful with a variety of different spices, so feel free to experiment by substituting or adding your favorites.


Spiced Carrot Jerky


  • 1 bunch of fresh carrots (larger ones are easier to work with)
  • 2 Tbs. coconut oil (or enough to lightly coat the carrots)
  • Granulated garlic or garlic powder
  • Coarse sea salt (optional)


Cut the tops off the carrots, scrub and peel if desired.  Using a mandoline slicer, slice each carrot lengthwise into strips.  Place the strips in a bowl and coat lightly with melted coconut oil.  (I like to melt coconut oil by putting it in a glass bowl and setting it on an electric candle warmer).  Lay the carrot strips in a single layer on food dehydrator trays (on mesh sheets if you have them) and sprinkle lightly with granulated garlic and coarse sea salt.


Stack the trays and dry in the dehydrator on the fruit/vegetable setting until they are chewy but not crisp.
